Pumpkin, Sage and Parmesan Ravioli

Ingredients

1 x med Pumpkin roasted

splash olive oil

3 shallots

2 cloves garlic

3 tbls fresh sage leaves

1 cup parmesan

1 egg

salt

wonton wrappers

How to!

1. Roast your pumpkin with olive oil and salt until tender.

2. In a pan sweat your shallots and garlic in a tbls olive oil and leave to cool.

3. Place all your ingredients into a food processor and blitz. Be careful not to mix to much as its nice to have a slightly chunky texture.

4.place large teaspoons of the mixture into the middle of a wonton wrapper and wet the edges with cold water. Fold over and wrap edges together of alternativly cut with a round mould.

5. Cook in boiling salted water untill al-dente and serve with brown butter and sage.

6. Top with parmesan and its ready to eat!
